Planted in Sauvignon, this cuvée is produced with vines from 35 to 50 years of age on very steep hillsides of clay-limestone nature called Terres Blanches (terroir of Kimmeridgian marls). A careful aging in barrels gave birth to this wine with aromas of red and black fruits harmoniously mixed with chocolate nuances. We find the woody notes (touch of roasting) well married to the fruit in an elegant mouth, well structured by tight tannins.
The difference in character and typicity of the wine is due to the age of the vines, the old rootstocks as well as the mono terroir (white earth).
Following the pressing of the grapes at low pressure, the juices are left to settle for 24 to 48 hours.
This white wine is vinified in thermoregulated stainless steel tanks (14-18 ° C).
Before and during the alcoholic fermentation, our wines are analyzed in order to optimize the winemaking.
This cuvée is aged on fine lees for 12 to 18 months with several brewing of these lees, in order to bring them the most richness and finesse possible by limiting the intake of sulfites.
This white Sancerre is not glued, it is simply bentonite in real dose to stabilize it from protein breakage, in the cold and filtered before bottling.
It is fruity and round with a good aftertaste marked by the terroir.
It is intense, complex, with a nice fullness on the palate on a very fresh mineral finish.
